Almond Butter Cake



Ingredients:
300g Butter
120g Sugar
1 tsp Vanilla essence
5 Large Eggs (separated) ~ 70g each
100g Sugar
240g Plain flour ~ sift twice with baking powder
1/2 tsp Baking powder

Method:
  • Cream butter, 120g sugar and add in vanilla essence till light at medium speed.
  • Add egg yolks one at a time. Scrape bowl, continue to to beat till batter well mixed.
  • In another bowl, whisk egg whites and 100g sugar to a soft peak.
  • Use hand to fold half of egg whites to the batter and slowly add part of the plain flour and egg whites alternately until you finish them. Do not over mix.
  • Pour batter into a 9" (lined) square tin and sprinkle almond flakes on top evenly.
  • Bake at preheat oven at 180C for about 40~45 minutes.
  • Remove cake from tin immediately after baked and leave to cool on wire rack.

This butter cake must be very soft since it uses chiffon method. Yumm.. I never bake this type of butter cake. Thanks for sharing.

What a coincident I also made butter cake (marble cake) yesterday. Ur cake looks very fluffy and it's perfect (no crack on top).

Yummy: I didn't measure the almond flakes and no need to toast, just sprinkle on top of batter evenly. You can even add walnut in the cake if you want~that becomes walnut butter cake.

SIS: I think can add 2-3 tablespoon of ground almond in it or about 100g of toasted almond nib in it.
